yes you can.  that is how the cherries started.  It will take a very long time as once a random baby shows a slight bit of color, you will then have to seperate it and keep breeding for that trait.  It could take many years for you to get what one would call a cherry shrimp.  or any other color for that matter.

no other colors can come out too.  but if you google the neocaridina color chart, you will see that certain colors are derivatives of another color so once on get a specific color to breed true, then other colors start popping up from that line.

 

It is a very cool project, but you are looking at ALOT of time to get anything nice.  That is why most of us pick the best of the best of what we want.  Even that takes good practice of culling lesser offspring in order to keep the line strong.
